Of the many bread books I’ve recently read in pursuit of the homemade sourdough boule, this one is my favorite. Boiling the belly, wtf? Keller is mainly a savory chef, but he grew bbakery love the aroma and flavors of bread and baked goods in Paris, as well as growing up where cookies were an everyday treat.
It doesn’t make allowances for those of us who don’t have the half a grand or massive kitchen space that isn’t already being taken up by this book to spare on a stand mixer. When I picked this book up bakefy the library, I was attracted by the cover and hooked by the beautiful photos I saw as I flipped through. That was the day I read this book in its entirety, cover to cover.
Ask yourself “am I willing to use a kitchen scale for every ingredient – even eggs”. Whatever recipe I choose, I am sure it will savor of disappointment. I can’t decide between three and four stars, so I’ll go for four. I am a collector of bakery cookbooks.
All bakers alike will benefit from what Keller provides here. There a is rhubarb recipe that uses a technique of cooking the rhubarb first and then making a tart around it. Even thou those are not kosher recipes, some of the can be modified and offer delicious foods. What began on Tuesday was the photography for the book, truly remarkable images from the amazing Deborah Jones most of the chefs who have worked on these books preface her name that way. Great bread is an extraordinary balancing act.

The food photographs tick off all the requisite boxes for “food pornography” and the recipes themselves are mouthwatering. This book is significant for me because it is the book I was reading during the grieving time of when my dear friend Connor Eberhard passed away from a rare and aggressive liver cancer that spread through the rest of his body. Which is awesome, because you can see the gorgeous photos large-scale. The oatmeal raisin cookies, for one, were bakery shop quality. The only thing I would change is breaking each chapter bouhcon this book into it’s own book: Some aren’t required and you can improvise a little yeah, I use normal muffin pans cookbiok the normal oven that came with my apartment What I have cooked from it is boychon.
This will be the fifth book in a series led by Thomas Keller that began with The French Laundry Cookbook which is one of the best chef-restaurant cookbooks ever do we need full dislosure here? It is full of stunning photography, informative tutorials, and lots of delicious sounding recipes.
Hanging out in the bakery was just part of the process, my seeing the bread in porduction. Weights of ingredients will occasionally differ or contradict what is listed in the instructions.
